Life Hacks for Turkmen students on cooking their favorite national dishes

Many argue that it is impossible to prepare national Turkmen food without the necessary accessories. Well, let us start prove the contrary. Let us start with pilav. It is one of the most favorite and tasty dishes of Turkmen cuisine. It is best cooked in the cauldron, of course. That is why Turkmen students, who study in another country, may think that it is no way to cook pilav if you do not have necessary kitchen appliances. Now we will share some life hacks with you. Pilav can be cooked in a pan, as well as in a conventional skillet (pan). Now the wok-frying pans are widely used, which somewhat resemble cauldron, but less tall and more rounded. There is no special recommendation in a way of preparation, only thing you just need to do is to stir more often and cook on a slow fire, in order to avoid burning. Now let us talk about Dograma. It is another delicious Turkmen dish, which is cooked on occasion of national holidays and celebrations. Its preparation is a little more difficult, since we need special bread (petir) that is baked in tandyr (cylindrical clay or metal oven used in cooking and baking). Now we will tell you how to cook similar bread in an electric stove. You will need water, salt, flour, fat (150g) (for oiling). It is necessary to knead medium hardness dough, to press down carefully and let it stay in a warm place. After 20 minutes, roll out the dough as a thin round layer; melt the fat, cool to a warm state and spread fat on the surface of the dough rolled out. Then make a thin long roll. Let it stay for a while, and it is better to cool in the refrigerator in order the dough to be a bit soaked with fat. If the roll turned out to be long, you can divide it into parts. Then gently twist the serpentine, and then, roll out into a flat cake with the help of hands or rolling pin. Then put it to the pan greased with oil or fat and form a round shape. On the surface of the cake, you need to make pinholes (you can use a fork) so that the dough does not swell. Preheat the oven and bake at a temperature of 200-220 degrees, to a brownish-golden color. Well, everything else is prepared on the same principle. Pre-cooked lamb meat is divided by hands on cooked bread, as well as onion that cut into pieces is added. It is desirable to chop the bread with your hands. Churek is bread, which is cooked in tandyr. However, it can be cooked in a conventional oven also. Definitely, the taste will be not same as churek from tandyr. But again, to find tandyr is not easy task. Necessary ingredients: flour - 300g. yeast - 8g. sugar - 0.5 teaspoon salt - 0.5 teaspoon water - 175 g. vegetable oil - 1 tbsp. Sieve the flour and add yeast, salt and sugar to it. Mix well, and then add water and oil. Knead the dough and let it stay for about 50 minutes. After kneading the dough, divide it into parts and make elongated cakes from each of them. Put the dough to the baking tray and use knife or fork to make figured patterns, lifting the sides. Put it into the oven for about 40 minutes. First 15 minutes, churek is baked at a high temperature, and then, next 30 minutes, at a temperature of 160 degrees. The list of dishes that we would like to eat away from home can be endless.
