Bread Baked on Hot Pebbles: An Iranian Tradition with a Thousand-Year History


Sangak Has Been Officially Added to the Intangible Cultural Heritage List. The traditional Iranian flatbread Sangak and its unique method of preparation have officially been added to Iran’s national list of intangible cultural heritage. The relevant decision was made by the country’s National Council for the Registration of Heritage Sites.
The name “Sangak” derives from a Persian word meaning “pebble,” directly referring to the bread’s baking technique. It is made from whole-grain dough with a high moisture content. Bakers shape the dough into a triangle, stretch it out, and bake it directly on heated river stones in a large oven. Before baking, the bread is often sprinkled with sesame or poppy seeds.
The official status will help preserve this culinary tradition for future generations.
