Features of the national cuisine: unash – Turkmen soup to strengthen the immunity

Turkmen national cuisine is very close to the cuisines of other Central Asian nations in terms of technology and product range, although all dishes have their own ways of cooking. And also there is the famous soup with beans and hand-made noodles – unash. This is a thick, nourishing and delicious hot dish, in which hot red pepper plays a key role.

In traditional practice, unash is recommended to use in the cold season as a preventive strengthening the immune system. In addition, this is a perfect recipe for those who want to diversify their diet.

Turkmen shurpa made of lamb, beans and homemade noodles

Pour water over the lamb and beans and boil during an hour, then add the noodles, sautéed onion, and pepper and continue cooking until doneness. Serve with sour milk (optionally).


Lamb 300 g
Beans 160 g
Wheat flour 60 g
Egg 1 PC
Onion 1 PC
Lamb fat 60 g
Sour milk 600 g
Red pepper – to taste

For noodles sift the flour, get it together, make a hole on its top, pour in salted water (1-2 tablespoons), raw egg and knead the dough. Cover the dough with a napkin, leave for 20 minutes, then roll it out, cut into strips 5-6 cm wide, and chop them into noodles.
Wash the lamb, clean it up from lappet and sinews, cut it into pieces, pour cold water over it, bring it to a boil over high heat, remove the foam and continue cooking at a low boil. Sort the beans, wash, and soak them in cold water for 5-8 hours. Put the prepared beans into the broth and cook together with the lamb for 1-1.5 hours.

10 minutes before doneness lower the noodles, onion finely chopped and sautéed with lard, add salt and pepper.
